Manuel is an independent aperitif brand created and produced in the Basque Country.
It began in 2024 with a simple idea: to create a vermouth full of character that remained genuinely easy to enjoy. Something to pour over ice, bring to the table and share!
The first bottle
Manuel started with Rojo, a smooth Spanish-style vermouth made with more than 30 botanicals.
Gentle sweetness, warm spices, citrus notes and refreshing bitterness come together in a balanced and approachable vermouth. It was created for the aperitif, served simply over ice with orange and an olive, but works just as naturally in a Negroni or Americano.
One bottle became two
A year later, Manuel Extra Dry Pickled Guindillas joined the family.
Inspired by Basque pickled guindillas, it explores a very different side of the aperitif: dry, bright and saline, with a distinctive savoury character.
Designed to be enjoyed chilled or used in cocktails, it brings a fresh twist to classics such as the Martini and White Negroni.
